Vegan Phat Phak Ruam

This is a super easy recipe for stir fry vegetables that I learnt on my cookery course in Thailand. You can use any vegetables you wish  (I used carrot, spring onion, tomato and baby corn). I also changed the recipe by removing the oyster and fish sauce but just add a tsp of each if you want to use them.

1 clove of crushed garlic

1 tsp of soy sauce

1 tsp of sugar

1/2 a vegetable stock cube

1. Heat oil in a pan, add garlic and cook until it’s fragrant. Add 1/2 a cup of water

2. Once the water is boiling add the vegetables and noodles and cook for about 5 minutes

3. While that is cooking, in a separate pan fry the tofu

4. Then add the sugar and soy sauce and leave to cook for 1 minute

5. Add the tofu at the end and serve
