Mummabear’s tofu burger

Me and my wonderful mother created a tofu burger recipe for my dinner tonight since there were no vegan burgers at the village fair today. It is very loosely based on Moosewood’s classic tofu burger recipe.

Heat some oil (I used coconut oil) in a pan, add the onion and sprinkle with oregano and salt. Cook on low heat for 7/8 minutes, stirring occasionally. Add the carrot and pepper and cook, covered, until the tender, stirring occasionally.


In a bowl mix the walnuts, soy sauce, mustard, tahini and the tofu. Add the cooked vegetables, once done, into the mixture and stir well, season to taste with salt and pepper.


Shape the mixture into 2 burgers and set them on a baking tray (I put foil on mine to stop them from sticking) and bake until firm and browned, 30 to 40 minutes.


Et voilà; Mummabear’s Tofu Burger ft a lot of spicey siracha….

Ingriedients

3rd of a block tofu, grated

1/2 small onion, finely chopped

1 big carrot, finely chopped

1/3 of a green pepper, roughly chopped

Pinch of salt

1 tsp of oregano

6 walnut halves (all I could find) toasted and chopped small

2 tsp of soy sauce

1 big tsp of whole grain mustard because I ❤️ it

1 tsp tahini

Method
Preheat oven to 180.

2. While that’s cooking, in a bowl mix the walnuts, soy sauce, mustard, tahini and tofu.
3. Add the cooked vegetables into the tofu mixture and stir well, season to taste with salt and pepper.

4. Shape the mixture into 2 burgers and set them on a baking tray (I put foil on mine to stop them from sticking) and bake until firm and browned, 30 to 40 minutes.
