Update on vegan attempt #374929472 + quick sushi recipe

So far it’s been 1 week and 3 days since my millionth attempt at veganism (is that a word?) And I’ve managed to stick to it… I haven’t had any cravings yet but I guess it’s still early days. I have noticed myself feeling bloated more? I’m not sure if that’s from changing my diet or maybe I’m eating more I’m not sure. I want to convince my family to do meat-free Mondays but they’re avid meat eaters so this will no doubt be impossible, I guess it’s worth a try!

I’ve been enjoying creating vegan things to eat- from tofu burgers to nut roasts to risotto to vegan sushi- recipe below. All the meals I used to love I’ve now veganized (definitely not a word) which makes me think that being vegan really isn’t that hard? I think it’ll be different when I go out for a meal in a restaurant but until then I’m finding the transition rather easy…

Veg Sushi

1 cup sushi rice

2 cups of water

3 tbsp rice wine vinegar

2 tbsp sugar

1 tsp salt

Chopped veg of your choice (I used baby corn, carrot, cucumber, avocado, chilli and spring onion)

4 sheets of nori

Soy sauce, wasabi, pickled ginger- optional, for serving

Method

1. Start by rinsing the rice in a stranger until the water is clear-removing the starch. Add to a saucepan  with the water and bring to a boil. Once boiling decide to simmer and cook for about 15 minutes; when all the water is absorbed

2. Once the rice is cooked and cooled down add the vinegar, salt and sugar and mix throughout the rice with a fork

3. Wet yours hand (so the rice doesn’t stick to it) and lay a thin layer of rice over one nori sheet. Arrange the veg in a thin line along the bottom of the rice.

4. Start to roll the rice and nori with your fingers into a tube and press firmly with the mat at the end to compact it. Wet the end of the nori slightly to stick it together

5. Slice into pieces with a sharp knife and eat, or put into air tight container and keep in the fridge.

    If you make the meal on Mondays without too much fanfare about it being vegan (until after when they say how much they enjoyed it!) they may be better disposed to doing it, if only for the pleasure of not having to plan and cook once a week.

  4. Cute looking sushi! Next time, try to cut carrots into strips and cook them in soy sauce and ginger. When you are ready to roll, l rather thanay them across the bottom of rice covered nori. You can also add cucumbers, scallions, bell peppers, and avocado, all cut into strips rather than chopped. It changes the texture and makes your veggies stick together.   5. Good for you on giving it a go again! I’ve had many a “slip-up” myself, it’s just a process 🙂 I DID notice that I was bloated when I first started transitioning too!! Haven’t quite been able to figure out what caused it (probably overeating lol) Great post xo

      I thought it was because I was overeating but if you see theonlinevegan’s post below its apparently due to increased fiber and carbohydrate content…(I probably have been eating more too as well though🙄) x

  6. Hi, the bloating is very likely just due to the increased fiber and carbohydrate content when going vegan. Vegan diets 99% of the time inadvertently lead to reduced fat consumption and increased fiber/carb intake. The issue is that suddenly increasing ones fiber content (although its healthy) in the diet causes initial bloating and gas as the digestive system has not adapted to such a high intake. But don’t worry, this does go, usually taking ~2 weeks. To help with the process drinking extra fluid usually helps. Hope this helps.

  7. Hi Thalia! I agree with the onlinevegan post above. Bloating will happen with the increased fiber. In your diet. I found one trick that might reduce the bloating, I squeeze lemon on everything. I hope it works for you.

      1. Hi Thalia. Lemon and actually cayenne pepper are very good at preventing digestive problems. It’s something I learned through friends and adopted years ago. It works for most people, but I’ve heard other people say it did nothing for them. I still swear by it. There’s also a great deal of research to support cayenne as a digestive aid. Let me know how it works.

  8. Good for you! I also found that once I started veganizing all the meals I used to love & coming up with new ones that were great in their own right, I stopped feeling daunted by the idea of being vegan & instead started getting excited about it. And your taste buds change after a month anyway, so then you enjoy all the food you eat now as much as you enjoyed what you ate before & really don’t need what you had before. At times it might feel tough again, but tap into how you feel now & stick with it! 🙂

    anyway, its actually quite easy if you don’t obsess too much over it, I have been a vegetarian since before I even knew what steak was, so I guess I am oblivious to what I am missing out and I eat a vegan diet 90% of the time, but like you said the ‘going to a restaurant’ is where it becomes tricky, most places sneak stuff in like butter… hehehehe.

    But good luck.
    and PS with meat free monday, with my family, who believe meat is the only food group, when i cook I just make something that veggie I don’t really make a big deal out of it, they eat it, they say ‘dam that was good’ and i silent smile on the inside knowing that they reduced their carbon footprint ever so slightly today by eating a vegetarian meal… 🙂

  10. I’m proud of you and anyone who gives veganism a chance. It might not be as easy as being a meat-eater but it’s definitely healthier and more compassionate. What I personally found helpful was educating myself on how my food ended up in my fridge. What animals have to go through in order for us to have a piece of cheese or meat. The environmental impact and the health hazards associated with a non-vegan diet.
    It’s also great fun trying to come up with new recipes or try to veganize (it is a word that I use often) favourite recipes. Veganism, like everything else in life is easier and more fun when you are with friends, and you have a whole community standing next to you for anything you might need. Keep on changing the world, one ripple at a time.

      Yes it definitely is not as easy but there so many alternatives nowadays it’s actually not that hard to do! My fridge is full of things I can eat now so I don’t have to be tempted by non vegan things. I love creating new vegan meals of the old things I used to enjoy which makes it even more fun

    Love your blog! So glad to hear that you’ve gone vegan…. whenever I see cheese now or milk, or people talk of yogurt, etc., all I can see is the poor ailing cow who’s life is shit, miserable and hell. I really can’t stand it anymore…. I know for me, I will never go back to eating dairy (or meat for that matter). Easy peasy!j I guess it depends why one chooses this lifestyle…. I know that my blood work has never been this good, my cholesterol is down, my iron is up, everything is fantastic. Protein is good, my B12 is good! That’s a sure way to find out that a plant-based diet is the best! Looking forward to seeing more of your posts! So proud of you!

  15. My younger daughter went vegan about 5-6 years ago, and by now she makes everything from stuffed grape leaves to beet gnocchi vegan. Enjoy your ride!

    Great recipe. I’m not vegan but I applaud those who are and I genuinely enjoy alot of vegan and vegetarian cuisine.
