Pizza: if you can’t join them, BEAT them

I was invited over by one of my friends to get a pizza delivery with her flat and revise together… however I couldn’t share a pizza with them and ask them not to get cheese so i decided to make my own pizza and take it over to her house (also a good way to procrastinate). I was going to make a proper pizza dough with yeast but realised I only had self raising flour, so I made a super simple base instead…

I made enough for me to have the next day too- smart thinking

Super simple but wonderfully delicious pizza recipe

Ingredients

For the base:

1 1/2 cups of self raising flour,

1/2 tsp of salt (I used garlic salt for extra flavour mmm)

1/3 cup of water

3 tbsp olive oil

For the toppings:

Whatever you fancy really…

For example

Tomatoes, sweetcorn, mushrooms, pineapple, olives, peppers, onion etc

Method

1). Mix the dry ingredients together, form a little well in the centre.

2). Add in the water and oil and mix slowly to create a dough- if it’s to wet add more flour or too dry add a bit more water.

3). Lightly flour a clean work surface and knead the dough a little (doesn’t need to be much because there’s no yeast to activate). Roll out the dough to form the base. The trick is to make it as think as possible without it ripping. Being the classy student I am, I didn’t have a rolling pin, so used a bottle of wine… it seemed to work ok…

4). Place on a tray in a preheated oven at 180 for 5 minutes, then flip it onto the other side for another 3 minutes.

5). While that’s cooking slice up your toppings on choice- I used tomatoes, mushrooms, baby spinach, olives and some garlic and onion I had sautéed a little bit first.

6). Once the base is cooked on both sides, top with tomatoe purée (I also added a bit of a jar of pasta sauce that needed eating) and add the chosen toppings.

7). Return to the oven for about 10 minutes, or until it reaches your desired crispiness.

8). I sprinkled a bit of dried thyme and nutritional yeast on it before serving. Delish!

Super healthy and not the slightest bit greasey unlike the delivered pizza
