Melon fruit salad bowl 

 


In an attempt to make myself feel better on this seriously miserable day I thought I’d create a fruit salad for my breakfast. Although there isn’t any proven benefits to fruit/vitamin C helping flu, I thought I may as well try and also create a delicious breakfast for myself as I do it…
Banana’s are amazing sources of B6 (a vitamin that most vegans are deprived of), full of fiber which is great for digestion and have lots of potassium in and they also help with fatigue.

Blueberries the superfood– they are great sources of vitamin K and C, fiber and manganese. As well as that they are full of antioxidants which help protect our bodies from disease.

Honeydew Melon is about 90% water which makes it a natural diuretic. It is rich in vitamin B and C and has a high potassium content.

Raspberries are also packed full of vitamin C, antioxidants and fiber. They are 95% water which is one of the highest water contents in fruit.

Nectarines are orangey coloured due to the high content of beta-carotene. This is then changed into vitamin A in the body which is used to maintain healthy skin, teeth, bone tissue, soft tissue and mucus membranes.

    It looks wonderful and I’m sure it did you a power of good. I can’t remember: do you juice? Even if you just use them as they are ginger and pineapple are powerful anti inflammatory foods as is turmeric. Would help with mucus and inflamed membeanes.

      Before going away I juiced regularly but haven’t much since I’ve been home- I should definitely start doing it again! Unfortunately we have no pineapple at home but I know we have ginger. Maybe tomorrow I’ll make a juice following your advice, with ginger, and let you know how it goes!

        My favourite for colds, hayfever etc is ginger (as much as you can stand), apple, half a stick of celery, carrot and lemon -organic, unwaxed so you can keep peel on. Have it through the day if you can make a double or triple amount.
